Who am I?
The face behind the bread
Hello there! I just wanted to introduce myself and my business.
My name is Sussa Goins, baker and owner of Eleven Eleven Wellness Bakery, a dedicated gluten free bakery in Charlotte, NC.
I am a chef by trade with many hours of formal training.
I was doing International catering for 2 years and while that was a great project I had the need to do something more meaningful and impactful in people’s lives and that’s when this idea came to me.
Having family members and friends with dietary restrictions made me realize the power I have in the kitchen and that’s when I started to make different recipes, creating delicious and healthy baked goods.
Eleven Eleven Wellness Bakery is the project I created to help you and your family transition from a gluten filled diet to a gluten free one, in a way that you won’t even notice the difference and will actually love.
Eleven Eleven Wellness Bakery is the combination of my 2 passions in life, cooking amazing food and helping others!

Why Eleven Eleven?
There are a couple of reasons why I chose the name Eleven Eleven:
When we had my niece Isabella visiting with us for a couple months, every time the clock marked 11:11, she would say: it’s 11:11 make a wish! So, I searched for the meaning of that number and found this:
“The meaning of number 1111 encourages you to create new beginnings, make new opportunities, and work on new projects with a strong and positive attitude. It wants you to know that you should start turning your dreams into reality”
When people have to go in a Gluten free diet or a healthier one, it is a new beginning for them, and we want to be their allies without sacrificing flavor, texture and options, to make that change in a positive way.
This venture is also a new beginning for me and a dream come true.
The other reason why Eleven Eleven is so meaningful to me is because:
Our awesome son Noah was born in 2011 at 11:07 am. (almost at 11:11 Ha!)
And he is my biggest teacher, my inspiration and the fuel to my creativity and passion in the kitchen.
